15 min Japanese beef steaks with slaw and miso
Running a household is tiring and busy. Try this healthy and satisfying meal that is on the table in 15 minutes. Beef sirloin is a good source of iron and in this dish, it’s paired with a fresh, delicious edamame slaw which is bound together with a miso dressing.

Ingredients
Beef
1 tbsp oil
600g beef sirloin steaks
1 tsp salt
Miso Dressing
1 ½ tbsp miso paste
1 tsp soy sauce
2 tsp vinegar
½ tsp honey
½ tsp sesame oil
1 tsp grated ginger
½ lemon, juiced
Slaw
1 telegraph cucumber, thinly sliced
1 cup edamame beans
350g slaw
200g mung bean sprouts
To Serve
1 bunch coriander
Method
Bring a small pot of salted water to the boil.
Heat oil in a large fry-pan on medium-high heat. Pat beef dry and trim any excess fat. Coat beef with salt measure. Cook for 3-4 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Rest, covered.
In a large bowl mix together all miso dressing ingredients and set aside.
Cut cucumber in half lengthways and thinly slice. Add edamame to pot of boiling water. Cook for about 3 minutes, until bright green and tender. Drain, rinse under cold water and leave to drain well.
In a large bowl, combine edamame and slaw ingredients and toss with miso dressing.
Pick coriander leaves and thinly slice beef.
Serve slaw topped with beef, miso drizzle and coriander.
Top Tip
Swap beef to chicken, pork or tofu and add rice for hungrier mouths.
