15 min chicken Bánh Mì inspired rice bowl, with sesame mayo

This quick and easy rice bowl is packed with delicious Vietnamese-inspired flavours. Tender chicken, fresh lime and a creamy sesame mayo come together for a mouthwatering meal. Brown rice is the hero of this meal because whole grains are full of fertility-enhancing vitamins, antioxidants and minerals like B-vitamins and fibre.

Ingredients

Chicken

  • 1 tbsp ginger, finely grated
  • 3 garlic cloves, minced
  • 1 tsp sesame oil
  • 600g diced chicken breast
  • 1 pinch of chilli flakes
  • 2 tsp fish sauce
  • 1-2 tbsp black or white sesame seeds

Rice

  • 1 pack (250g) pre-cooked microwave brown rice

Salad

  • 1 baby cos lettuce, sliced
  • 2 carrots, grated
  • 350g slaw
  • 2 tbsp rice wine vinegar
  • 1 tbsp soy sauce
  • 1 lime, cut into wedges

To Serve

  • 3 tbsp mayonnaise
  • 1 tsp sesame oil 

Method

  1. Finely grate ginger and mince garlic. Combine in a bowl with chilli flakes and pinch of salt. Set aside.
  2. Heat sesame oil in a frypan on medium-high heat. Add chicken, ginger and garlic mixture and a pinch of salt and cook for 6-8 minutes, tossing occasionally, until golden and cooked through. Remove from heat and stir through fish sauce and sesame seeds.
  3. Squeeze rice in pack to separate grains. Tear top and microwave in pack for 2 minutes.
  4. Meanwhile, slice baby cos and grate carrot. Add to a bowl with slaw, rice wine vinegar and soy sauce. Toss to combine and set aside.
  5. Cut lime into wedges. Set aside. In a small bowl combine mayonnaise and sesame oil. Season with salt. 
  6. Divide rice, chicken and salad between bowls. Drizzle over sesame mayo. Serve lime wedges on the side.

Top Tip

Swap chicken for any other protein of your choice! This could be tuna, edamame beans, tofu or beef mince.
